Gluten-Free Feels Good

In an effort to eat gluten-free, I created a muffin recipe that I'd like to share.  This was my first crack at it and they turned out decent.  Next time I make them I will add the full 2 cups of blueberries and a couple tablespoons of toasted flax seeds.

Blueberry Oatmeal Muffins

1 1/4 Cup Rice Flour
3 tsp Baking Powder
1/2 tsp Salt
1/2 Cup Rolled Oats
1 tsp Cinnamon

1/4 Cup Melted Margarine
1/2 Cup White Sugar
1 Egg
3/4 Cup Evaporated Milk
1 tsp Vanilla

1 - 2 Cups Frozen Blueberries

Preheat oven to 350 degrees.  Mix together the flour, baking powder, salt,  rolled oats and cinnamon in a medium sized mixing bowl and form a well.

In a separate bowl whisk together melted margarine, sugar, egg, milk and vanilla.  Pour this into the bowl of dry ingredients and stir together until just mixed then mix in the berries.

Line muffin pan with paper cups and fill two thirds full.  Bake for 20 - 25 minutes until toothpick comes out clean.  Makes 10 muffins.

Delicious, warm from the oven blueberry oatmeal muffins.
Thanks for dropping by my blog and if you try this recipe please let me know how it turned out for you!  Namaste.

The "Valleyview Friends of the Library" March Madness Silent Auction and Sale began on Tuesday, March 3, 2015 and will run all month long.  The silent auction items are located in the Gallery at the library.  You can view the items in person during open hours or you can view them on the Valleyview Municipal Library Website and the Library Facebook Page.  You may place bids in person, or by calling the library at 780 524 3033 or by email.  Bidding will close on Tuesday, March 31, 2015 at 4:00 p.m.

Here's the 3 piece hand made jewelry set that I donated.

This 3 piece set is designed with pink quartz, crystal, faux pearls, foil lined glass and silver accent beads and hand made by myself.  The necklace is 31" long and the earrings are 2.5" long.

The bracelet is adjustable to 8.5"
It's such a pretty set.  It would go with all your summer tanks and tees. Wear it alone or layer it with your favorites.
Nice and long dangly earrings.
A hand made work in progress.

Please help support our local library by bidding on this and the many other items on display.

As always, thank you for dropping by my page.  Feel free to leave a comment. I'd love to hear from you and Namaste.
